Step 1: Thaw
For best results, your ribeye should be completely thawed. Once thawed, allow steak to sit at room temperature, about 1 hour before you plan to grill. This will temper the ribeye, bringing the center of the steak to room temperature and allowing for more even cooking throughout.
Step 2: Preheat Your Grill
If you’re using a gas grill, this is just simply turning the grill to high. If you’re using a charcoal grill, get the charcoal hot first for 15 minutes. Preheating your grill ensures a perfect sear.
Step 3: Prep Your Steak
Pat the steak dry with a paper towel. Next, sprinkle coarse salt and pepper over the steak and gently pat steak to make it stick. Flip the steak over and do the same on the other side.
Step 4: Grill
Place the steak on the heated grill and grill for about 3 minutes on one side. Flip, grill for three minutes on the other side, then flip again, positioning the steak so that it has a nice crisscross grill mark. Flip one more time to cook for three more minutes on the other side, again positioning for grill marks.
Step 5: Rest
Let your ribeye rest at least five minutes to allow the juices to redistribute.
